Greening Gastronomy


The 1990s saw the Government wake up to environmental issues and one initiative centred upon Further and Higher Education. There was to be emphasis on the environment within course content. Prof Shirley Ali Khan wrote "Greening the Curriculum" in 1991, hence this page title.

Much of this website is devoted to gastronomy as a field of study.  There is a page for lecturers.
